healing Elderberry Tea

I LOVE elderberry. Always have. It gives me such strong, wonderful memories of my childhood in the UK. This recipe has a little hint of NZ with the Manuka honey which is incredibly healing and nourishing.

It’s simply, low fuss and does wonders in making giving you that extra bit of pep when your immune system is lacking. Elderberries are full of vitamins and nutrients and there is even a little science that shows that they may be helpful in cold and flu season.

INGREDIENTS

3 tbsp elderberries (frozen or dried is fine)

500ml water (cold)

1 lemon juiced

Manuka honey (to taste)

Thumb of ginger

DIRECTIONS

Place water, elderberries, lemon juice and ginger into stove pot and bring to a boil.

Reduce the heat and let simmer for about 10 mins.

Strain into a cup and then add honey to your taste. I also love adding a slice or two of lemon. The beauty of this tea is that you can make it yours. Try swapping in and out ginger, cardamom, cinnamon stick even orange (I quite like blood orange).
